Quinoa Salad

1/2 cup cooked quinoa
1- 40z. chicken breast
1 cup cherry tomatoes, halved
1 cup black beans
1 yellow cup yellow corn
1 ripe avocado



  1. Cook Quinoa according to instructions.
  2. Season chicken as desired (pepper, paprika, lemon juice, garlic)
  3. Grill chicken (approximately 5-7 min each side)
  4. In a Bowl mix ½ cup quinoa, chopped chicken breast, tomatoes, corn + black beans and top with avocado and cilantro!
